Weeknight meals. It’s time to get back to it. The holiday season has come and gone (does it take anyone else about 47 weeks to recover after irregular holiday weeks?), I made it through a wild week at work and I’m looking forward to getting back to our normal weekly schedule for the rest of the month. Our weekly schedule includes easy weeknight meals and these Cheesy Mashed Potato Puffs using leftover mashed potatoes definitely fit the bill!
Part of our weekly normalcy includes meal prepping which can look a lot of different ways.
Maybe it’s prepping snacks for the kids or to take to work. Maybe meal prepping involves portioning out a big batch of this Easy Fried Rice or Cheeseburger Chowder so your lunches are ready to go for the week.
Last night my meal prep for the week (or the next day, rather) included making extra loaded mashed potatoes that we were having with our steak dinner so I would intentionally have leftovers.
Cook once, eat twice! That’s my motto.

Tonight, those loaded leftover mashed potatoes turned into these Cheesy Mashed Potato Puffs. I loaded up the potatoes with some extra cheese, green onion and a bit more seasoning (they didn’t need much since they were already loaded), added a beaten egg which creates their light and fluffy glory and scooped them into a muffin tin with my handy ice cream scoop.
I served the Cheesy Mashed Potato Puffs with some leftover BBQ pork which ended up being similar to my BBQ Roast Beef Shepherd’s Pie, just more fun and individualized. I also added a layer of caramelized onions to the mix and oh my! Those onions were probably my favorite part!

Cheesy Mashed Potato Puffs
These cheesy mashed potato puffs using leftover mashed potatoes are are the fluffy goodness your dinner deserves.
Ingredients
- 3 cups leftover mashed potatoes
- 2-3 Tbsp. milk (amount dependent on the consistency of your leftover mashed potatoes)
- 1 egg, beaten
- 1 - 1 1/2 cups shredded cheese (mozzarella, cheddar or any other flavor combination)
- Other flavors: onion powder, garlic powder, ground pepper, seasoned salt, sliced green onion, cooked bacon, sour cream, cream cheese (optional and dependent on the flavor of your leftover mashed potatoes)
Instructions

Preheat your oven to 350°F.

Add your leftover mashed potatoes and milk to a bowl and warm in the microwave for one minute. Stir to combine.

Add the beaten egg to the potatoes and stir to combine. The egg will add moisture to the potato mixture so if you're adding additional flavors like sour cream, make sure the potatoes don't become too runny.

Add the shredded cheese and any other flavor add-ins. Stir to combine.

Spoon the potato mixture into greased muffin tins. I used my trusty ice cream scoop to get even portions.

Top each puff with a sprinkle of shredded cheese and bake at 350°F for 20-25 minutes or until the potatoes are set and begin to turn golden brown.

Garnish with green onion, sour cream, crumbled bacon or any other addition of your choice.

TIP: Jazz up burger night! Forget the bun and serve these Cheesy Mashed Potato Puffs on top of a burger.
